Mitali Bixby is an Adjunct Professor at Babson College, where she teaches Science and Technology of Environmental Health. She holds a Master's degree and a Bachelor's degree in Human Nutrition from the University of Illinois Chicago (UIC), with a minor in Nutrition Sciences. She is a licensed Registered Dietitian and certified Food Technologist.
With 24 years of professional and academic experience spanning Human Nutrition, Environmental Health, and Food Science, Mitali brings a rich blend of scientific expertise and real-world application to her teaching. Her prior roles include serving as a Research Dietitian at Boston University Medical Center and Brigham and Women's Hospital, where she built a strong foundation in clinical and applied nutrition research. Her work has been featured in several nutrition publications, and she is a Gubernatorial Appointee on the Massachusetts Board of Dietitians and Nutritionists.
Her areas of interest span human health, sustainability, and nutrition, with a particular focus on the intersection of food systems, environmental health, and human well-being. She is dedicated to equipping students with the critical thinking skills needed to navigate today's complex health and environmental challenges.
